Zucchini Bread


4 c. shredded zucchini (Not done in blender)
3 c. flour
2 1/2 c. sugar
1 1/4 c. oil
4 eggs, beaten
1 T cinnamon
1 1/2 t. baking soda
1/2 t. baking powder
1 c. chopped nuts
1 T & 1 t. vanilla
1 1/2 t. salt


Heat oven to 325
Grease 2 loaf pans (Bottoms only)
Blend all ingredients on low speed 1 min.
Beat on med. speed 1 minute
Pour into prepared pans
Bake until wooden toothpick inserted in center comes out clean (50 min-1 hour)
Cool 10 min., remove from pans
Cool completely
