Shoo-fly Cobbler

If you like shoo-fly pie, you will like this recipe. I haven’t met anyone who hasn’t  . . .  it is amazing served warm with vanilla ice cream.

4 c. flour
1 1/2 c. brown sugar
1/2 t. salt
2 sticks of butter
2 c. dark corn syrup (King)
2 t. baking soda
2 c. warm water

Stir together flour, brown sugar and salt
Cut in the butter until the size of peas
Press 1/3 of this mixture in a 9×13″ pan.
In a separate bowl, stir together corn syrup, baking soda & warm water.
Slowly pour 2 c. syrup mixture over flour mixture in 9×13″ pan
Sprinkle with another 1/3  of flour mixture
Add remaining syrup, then sprinkle with remaining flour mixture
Bake @ 325 for 50 min.
Serve warm with vanilla ice cream if desired.
