Ohio Baked Chicken

When my mom hosted a speech and writing class in her home, we didn’t know we would come away from that experience with one of our favorite dinner recipes! A student made this recipe for his demonstration speech, and we are still making this recipe today. When I make this, I like to add more sauce and spice ingredients to taste . . . because I like more sauce over my rice and less chicken.

Ohio Baked Chicken
2 whole boneless chicken breasts (cut in bite size pieces)
1 tsp. each of paprika, celery salt, curry powder, oregano, and ground pepper.
1/2 tsp. salt
1/4 c. melted butter
1 (12 oz) can evaporated milk
1/2 c. sour cream
Cooked rice

Melt butter and add spices, Add chicken and cook about 15 minutes
Add evaporated milk and simmer for 30 minutes
Remove chicken and add sour cream, stirring to mix evenly.
Return chicken to mixture & heat thoroughly, but do NOT boil (or sour cream will curdle)
Serve over rice.
